VITO'S

This is the North Idaho expression of an Italian espresso. And our founders were pretty passionate about getting that right. Vito's is a sweet, medium coffee with nutty notes. Think of the fluffy nougat in a candy bar, and you'll be getting pretty close. The profile here is marshmallowy with a caramelized sweetness, making Vito’s delightful on espresso. In fact, it’s DOMA’s house espresso. A gentle acidity makes way for a molasses flavor and smooth mouthfeel.

How To Brew

We use a 1:16 Coffee Brew Ratio, which means for every 1 part of coffee there are 16 parts water. Having a grinder that produces a consistent grind size is pivotal for great coffee, so be sure to use a conical or flat set of burrs. Grinding fresh for each batch of coffee will produce the best tasting results.

DOMA Coffee: Vito’s beans for espresso

I have been a fan of DOMA for decades! Long ago they sponsored a cycling team I raced on, we got to know the founders personally and we loved what they were doing, and what they stood for. We’ve been buying coffee from the ever since no matter where we’ve lived. Vito’s makes a great all around espresso. I use it for milk based and straight shots. It’s consistent, once the grind is dialed and it’s not super finicky with weather changes, though I’ll have to make small tweaks occasionally. I generally do 19.5 grams in/ 36-38 out @ 27-32 seconds (199 degrees) and I’m
pretty happy. Thanks DOMA!!!
