Ripe with flavors of watermelon candy, raspberry and mint leaves, this unique co-ferment coffee is a blend of fruit-candy sweetness, both delicate and botanical.
This coffee is an example of some of the fun, experimental coffees coming out of Colombia. It was processed using a combination of a washed processing method, limited oxygen fermentation, and co-fermentation with a mother culture featuring tropical fruit nectar. This nectar, from the Citrullus family (watermelon, melon), enhances the coffee's natural sweetness and high Brix levels, which are carefully monitored during processing. The farm, Monteblanco, is a small family farm that grows microlots of competition coffees.
This coffee is all about play, and the result is one-of-a-kind. Enjoy on pour-over!
