
COLOMBIA
This new single-origin coffee from the Santander region of Colombia has a buttery mouthfeel and balanced acidity. It's a fully-washed Typica variety grown at 1,650 masl in the Andes mountain range. We gave this organic coffee a medium roast, showcasing sweet notes of concord grape and a dark chocolate-like finish.
This coffee comes from a farm named La Mesa de Los Santos (“The Table of the Saints”). This is our fourth year buying coffee from this farm, which is a stand-out for several reasons. They’ve got a reputation for producing incredible organic coffee in a biodiverse environment. In a great example of agroforestry, coffee is cultivated under native shade trees on an 800-acre estate that is so bird-friendly it has been certified as a Smithsonian Migratory Bird Center. By partnering with Royal, the farm founder’s grandson, Oswaldo Acevedo, is able to pay wages well above the Colombian minimum salary and provide health, wellness and financial benefits to coffee workers and their families.
